Breakfast Sandwiches

  • 1 English Muffin (whole grain)
  • 2 Eggs (or 1 whole egg and 2 egg whites)
  • 2 Tbsp Water (this makes the eggs fluffier)
  • 1 oz cheddar cheese (sharp or medium for best taste)
  • chopped green onion to taste (approx. 2 Tbsp)
  • Spray Oil (Pam)

  1. Spray container with Pam
  2. Add 2 eggs to container
  3. Add 2 Tbsp of water to eggs (I just put the container under the tap and guess the 2 Tbsp amount)
  4. Add 1 oz of cheddar cheese (I just cut a few thin pieces right off the block to save time and dishes)
  5. Add 2 Tbsp of green onion to the mixture
  6. Stir everything together
  7. Put in Microwave for 2 minutes
  8. Put English muffin in the toaster (if you do this right after you start the microwave they should be done at about the same time)
  9. Place one half of the English muffin on top of the egg (while still in the container, then flip over) Add the other half of the muffin to the top.

Note: You can also add some Canadian back bacon or Turkey bacon strips to the muffin for some variety.
